Ingredients
– 2 grass-fed burger patties
– 1 medium butternut squash, peeled and cubed

– 2 red chilli peppers, sliced
– 1 tablespoon fresh rosemary, chopped
– 2 tablespoons coconut oil
– 1/4 cup pistachio nuts, chopped
– Salt and pepper to taste
Instructions
Preheat your grill to medium-high heat.
Grill the butternut squash cubes until tender and slightly charred, about 10-15 minutes. Set aside.
In a large pan, heat 1 tablespoon of coconut oil over medium heat. Add the broccoli florets and sauté until bright green and tender, about 5-7 minutes. Remove from the pan and set aside.
Add the remaining tablespoon of coconut oil to the same pan. Sauté the minced garlic, ginger, red bell pepper, and chilli peppers until fragrant and softened, about 3-4 minutes.
Crumble the grass-fed burger patties into the pan with the sautéed vegetables. Cook until the patties are browned and cooked through about 5-7 minutes.
Add the grilled butternut squash and sautéed broccoli back into the pan. Stir to combine and cook for an additional 2-3 minutes to heat everything through.
Season with salt and pepper to taste.
Sprinkle the chopped pistachio nuts over the top just before serving for a delightful crunch.
